Options in no particular order:
1) Hit your Super key (also known as the Windows key) and type in the word Display to open the Display Settings. Then see if you can mouse over to the Resolution section to change it to something more suitable.
2) Get creative with the tab button to go through the prompts.
3) Put the hard drive in another computer. Install Linux Lite to that hard drive. Then return the hard drive to the original computer.
4) Use a different monitor and/or keyboard for the install.
