Hi!

Maybe the CPU or videocard GPU is overheating?
Or a new USB device was connected? Note that I have also seen that using a USB hub that didn't have an external power supply gave trouble too.
If everything worked before the upgrade to 5.0, maybe trying a different Kernel would solve the issue.
Edit:clarification/typos.

[...] Quadro K600, nvidia 440 drivers, 16gb ram, 256gb ssd [...]

Hi!
I never had the chance to work with NVidia on Linux, but on other forums I found this approach:
Install Linux without NVidia drivers. I forgot what you have to do exactely, but it's something like "FORCE_VESA" kernel parameter passed at install startup. Querry Google for articles.
It seems that the installer goes sideways with NVidia drivers.
Then, if you succeed, from System Menu, choose "Settings", then "Additional drivers" and see what the Synaptic PM lists there. You may then install the proprietary drivers. This might solve the problem.
I did the exact same thing for firmware and my Intel GM 45 Express chipset and works fine.
It seems that on many Ryzen processors this issue appears and many people got it solved.
Find the articles use as a search string, the exact specs for your Ryzen.
Maybe even here you can find some ideas, searching this way.

Good luck!

[... ] LL 5 freezes randomly, [...]
Looks like it's something USB related. Maybe the drivers, maybe the kernel, I'm out of ideas.
I got 3 random freezez yesterday and two today.
I think I'm going to switch back to LL 4.8.
If this bug keeps showing once again, it's the only sensible, sound solution.
Might also be XFCE.
The old Panel problem coming from the worst File Manager ever: Thunar. Some people tried to fix, but Thunar looks like has a long way to go before exiting the "Crappy Toy" stage. I'd rater call it a PRE-PRE-Alpha version.
Uninstalling it is impossible, since it requires uninstalling XFCE itself... :o
