Not familiar with desktop dock in a Linux context.  Is it something you've installed or something that came with linux lite?  A quick search suggests it might refer to 3rd party launcher packages for MS Windows OS.

The Linux Lite Panel - usually located along the bottom of the desktop and typically showing things like Menu, Program Launchers and the system clock - is tweaked via the customise panel options which can be accessed by clicking

Menu
Settings
Panel

Here you can adjust Panel display and appearance and add or remove items.  There is an option to select and remove a panel.
