Persistence with Unetbootin worked for me when I used it using linux Lite 2.0.
I downloaded, md5sum checked, LL2 iso before running Unetbbotin myself.
LL 3.6,2.8
Dell XT2 > Touchscreen Laptop
Dell 755 > Desktop
Acer 150 > Desktop

Used the Browse feature myself and selected LL2.0 from my downloads folder. Clicked on the Open Tab, it showed in the window and unetbootin copied it to my usb stick. Installation from there was a breeze.

Oh, I see how you were trying to use unetbootin. I've never used it that way. Always just downloaded an iso to my hard drive and then used unetbootin to copy it to my stick. Sorry, not much help on that one. Does unetbootin have a website where they could explain and solve your problem, perhaps?

To use Unetbootin I had to clear my usb stick using the partition manager (Gparted) and set it to FAT 32. Then I was able to copy the ISO via Unetbootin. Hope that helps a little.
