There are a couple ways to do this, it depends on your approach.
--If you boot the Live system, you can format your partition using the built in partition editor.
--Or during install select "something else" and it will open the partition editor,select and format the partition desired.
The last way saves steps and will ensure you install to the correct partition.

What i always do is booting with a Gparted live-cd and use the Gparted tool to erase my whole disc. After that you can reboot with the live-dvd or live-USB.

Now that we have UEFI there are issues to address considering your BIOS system, if your machine has windows on it now. You may find yourself having to press the F1 key in some cases to continue booting. Some 64bit mem stacks and BIOS will allow the bypass, others will not, and there is often a small 32bit FS partition that should not be deleted as it is linked to a flash BIOS program. Be careful with American Megatrends BIOS systems on ASUS boards. All intel you can do just about anything you want as long as you load linux from a live DVD.
